Random Delights

It feels like I've been slogging through the last few days and not accomplishing much in the way of making stuff.  I've been busy taking pictures and editing pictures to be uploaded into my Etsy shop.  Managing time as a full time mom is tricky.  What I really want to be doing is making things.  But the Etsy administrative stuff can easily take over.  I want to be stitching cuffs for hours on end like I was a week ago, and working on another new pendant idea that's been floating around in my brain.  That's just not possible in this moment.  I have to accept that and be alive in every moment.  Anyhoo, I woke up this morning and sat on the couch with my kids, enjoying the shadows that my heart garland was making.

It was beautiful and comforting.  My Valentine's tree made a beautiful sight too.

And then there's the delight of supper a couple of nights ago.  Giant ravioli stuffed with walnuts and cashews.

This recipe comes from a wonderful book called V Cuisine - The Art of New Vegan Cooking.  About a year ago I saw it sitting on my parents'coffee table.  My mom had borrowed it from the library.  Flipping through it, I fell in love with the tantalizing pictures and descriptions of every culinary delight.  I had to have it and it has become one of my favorites.  I'm not vegetarian or vegan.  But this book kicks butt.

I love preparing supper with a glass of wine in hand.  It makes me look forward to cooking.  The ravioli are stuffed with a nut "meat" that includes walnuts, cashews, spinach, mushrooms and onions.  Incredible.

Ready to be cooked in boiling water!

Ta-dah!  Tomato sauce and parmesan petals on top.  Delicious!

  1. Oh my that Ravioli looks scrumptious! My other half is a vegetarian and I have to admit to struggling with new appetising ideas for dinner for him so this would be just the thing!
